Growing with the Seasons
We grow seasonal mushrooms using sustainable practices for local farmers markets and harvest them fresh each week. We focus on rotating varieties of oysters, lion’s mane, king oyster, shiitake, and chestnut mushrooms.
Our selection shifts throughout the year. For each season, you will find mushrooms harvested when they’re most flavorful and vibrant.
(March–May)
As the weather begins to shift, so does the mushroom lineup. Spring brings a mix of hardy winter growers and the first of the warmer-season varieties, a time of transition and variety.

Summer
(June–August)
With warmth and humidity in full swing, summer is ideal for fast-growing, delicate varieties. These mushrooms tend to be more tender and subtle, perfect for lighter seasonal cooking.

Fall is a favorite season for many mushroom lovers. The cooling temperatures bring back heartier varieties and often the widest selection of the year.

Winter
(December–February)
Winter is a slower, quieter growing season—but one that produces deeply flavorful, cold-loving varieties. These mushrooms thrive in crisp air and steady conditions, developing rich textures and concentrated taste.
